The Oil of Coconut

Coconut Oil has been described as “the healthiest oil on earth” – and that is quite a remarkable statement. What makes coconut oil so good and its reputation for almost magic health cures? The difference is in the fat molecule. The vast majority of fats and oils in our diets, whether they are saturate or unsaturated come from animals or plants and are composed of long chain fatty acids. The size of the fatty acid is what’s important. The saturated fatty acids in coconut oil are predominately medium-chain fatty acids (MCFA). MCFA’s do not have a negative effect on cholesterol and help protect our body against disease. It is primarily due to the MCFA in coconut oil that makes it special and beneficial. There are only a few good dietary sources of MCFA’s – by far the best sources are from coconut and palm kernel oils.
