Choose one of these tasty mixtures to cook with salmon or any fish of your choice. A main dish and side in one packet – with no sink-full of pots and pans! Make vegetable servings suited to your needs.
Sprouts and Mushrooms – Stir together 1 pint trimmed, halved, and sliced Brussels sprouts; 1 package (3.5 oz) sliced shitake mushrooms; ¼ cup reduced-sodium soy sauce; and 1 tablespoon sesame oil. Top each fillet with 3 thin slices peeled fresh ginger. When cooked, sprinkle with 1 teaspoon toasted sesame seeds, 2 chopped scallions, and 2 tablespoons chopped cilantro- Red Pepper, Onion, and Chickpeas – Stir together 1 thinly sliced red bell pepper, 1 thinly sliced small red onion, ½ cup canned chickpeas, 12 halved kalamata olives, 4 teaspoons olive oil, ¼ teaspoon salt, and 1/8 teaspoon ground cinnamon.
- Zucchini, Tomato, and Basil – Stir together 2 very thinly sliced medium zucchini, 1 cup halved grape tomatoes; 3 tablespoons torn basil leaves, 4 teaspoons olive oil, 1 teaspoon drained capers (optional), and ¼ teaspoon salt.
- Spinach with Lemon – Stir together 8 cups firmly packed, chopped spinach; 4 teaspoons olive oil; ¼ teaspoon salt. Top eat fillet with 1 thin slice lemon. To serve, sprinkle fillets with 1 tablespoon chopped parsley.
