I’m always looking for healthy eating recipes, especially starches because the usual tasty ones are generally not good for you so, when I ran across this, I grabbed it.

2½ Pounds Sweet Potatoes – peeled & cut into 1½“ pieces
1/3 Cup Pure Maple Syrup
2 Tablespoons Butter – melted
1 Tablespoon Lemon Juice
½ Teaspoon Salt
Freshly Ground Pepper – to taste

Directions

  1. Preheat oven to 400ºF.
  2. Arrange sweet potatoes in an even layer in a 9×13” glass baking dish. 
  3. Combine maple syrup, butter, lemon juice, salt, and pepper in a small bowl.  Pour the mixture over the sweet potatoes; toss to coat.
  4. Cover and bake for 15 minutes.  Uncover, stir, and cook (stirring every 15 minutes) until tender and starting to brown (45-50 minutes more).

Note: You can make this ahead of time, cover, and refrigerate for up to1 day.  Just before serving, reheat at 350ºF until hot (about 15 minutes).

Makes 12 servings.  Per serving: 96 calories, 2g fat, 5mg cholesterol, 19g carbohydrates, 1g protein, 2g fiber, 118mg sodium, 189mg potassium
