Every once in a while I like to share a healthy recipe because, after all, they say we are what we eat, therefore, what we eat is part of our beauty skin care regimen. So this week’s food secret for beautiful skin is Apple and Celery Root Salad!
1/4 Cup Low-Fat Buttermilk
1 Ounce Crumbled Blue Cheese
3 Tablespoons Chopped Chives – plus more for garnish
1/2 Teaspoon Worcestershire Sauce
3 Dashes Hot Pepper Sauce
1/4 Teaspoon Freshly Ground Black Pepper
1/2 Pound Celery Root – peeled & cut into matchsticks
3 Tablespoons Fresh Lemon Juice
2 Granny Smith Apples
Directions
- Whisk together first 6 ingredients (through black pepper), then toss in celery root – let stand 15 minutes.
- Meanwhile, place lemon juice in a bowl. Trip tops and bottoms from apples, core center and remove seeds, then cut into matchsticks. Transfer apples to bowl with lemon juice and toss to prevent apple from browning.
- Divide apple matchsticks into 4 servings and toss with celery root mixture.
- Garnish with additional chives and serve.
