Super Food Recipe: Sweet Memories Apple-Cranberry Cake

Benefits of Cranberries.

Cranberries can:

  • fight E.coli – this is the bacteria that can cause urinary tract infection
  • get rid of H. pylori – this is the bacteria that is linked to stomach cancer and ulcers
  • help eliminate streptococcus mutans – this is the bacteria responsible for tooth decay
  • help prevent stroke and heart disease – this is a finding by a university study published earlier this year.


4 big apples of your choice cut into thin lobes
1 cup of fresh or frozen cranberries
1teaspoon of ground cinnamon

Batter mix:
4 eggs
½ cup of Splenda
2/3 cup of oatmeal flour
1/3 cup of sprout flour
1teaspoon of baking powder


Cover round cake pan with a baking paper; arrange layers of apples and cranberries. Sprinkle with ground cinnamon.

Beat eggs with an electric mixer for 2-3 minutes, stir in Splenda and beat another 2 minutes. Add flour and baking powder and stir gently. Pour batter over apples and cranberries.

Bake in 360°F for 35-40 minutes, or until inserted wooden toothpick comes out clean.

Pulling the baking paper remove the cake from the pan, place upside-down on the plate and take out the baking paper.

You can now sprinkle it with more cinnamon, and serve it warm or cold.
