Green and Red Walnut Boats

Serves 2-3



  • 1 Cup Walnuts – soaked overnight
  • 1 Tablespoon Olive or Macadamia Oil
  • Juice from ½ Lemon
  • 1 or 2 Tablespoons of Nutritional Yeast
  • ¼ Cup Water
  • Fresh Chives or Italian Parsley – chopped very fine
  • Garlic Granules or Powder
  • 8 Belgian Endive Leaves
  • 1 Teaspoon Soy Sauce or Gluten-Free Tamari or Celtic Sea Salt*

Recipe Directions

Process the first 7 above ingredients, holding back on soy sauce or salt until tasting. Scoop the paté into 8 Belgian Endive Leaves and garnish with ingredients below. This also makes a lovely filling for scooped-out tomatoes.

  • Garnish: Fresh or defrosted green peas, pomegranate kernels
  • Alternate Garnish: Green olives and dried cranberries
