Super Food: Green & Red Walnut Boats
Green and Red Walnut Boats
- 1 Cup Walnuts – soaked overnight
- 1 Tablespoon Olive or Macadamia Oil
- Juice from ½ Lemon
- 1 or 2 Tablespoons of Nutritional Yeast
- ¼ Cup Water
- Fresh Chives or Italian Parsley – chopped very fine
- Garlic Granules or Powder
- 8 Belgian Endive Leaves
- 1 Teaspoon Soy Sauce or Gluten-Free Tamari or Celtic Sea Salt*
Process the first 7 above ingredients, holding back on soy sauce or salt until tasting. Scoop the paté into 8 Belgian Endive Leaves and garnish with ingredients below. This also makes a lovely filling for scooped-out tomatoes.
- Garnish: Fresh or defrosted green peas, pomegranate kernels
- Alternate Garnish: Green olives and dried cranberries
