Super Beauty Food: Carrots

Looking for a summertime glow? Swap sunbathing and over-exposure to UV rays for carrots!
Believe it or not, bulking up on orange-hued veggies has been linked to a naturally glowing complexion. And if that's not enough, the beta-carotene in carrots aid to tighten and tone tissues to help give you young looking skin forever.
This carrot salad will not only make you gorgeous, but it's tasty to boot! It is a great addition to a summer barbeque or picnic and can be made well ahead of time. Eat yourself pretty!
Carrot Salad with Cilantro and Pistachio
Ingredients:
- 4 cups carrots, peeled and grated
- ¼ cup fresh lemon juice
- 1 teaspoon coriander
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt
- 1/3 cup olive oil
- ½ cup fresh cilantro, chopped
- ¼ cup pistachios, shelled and chopped
Directions:
Place carrots in a large bowl and set aside.
In a smaller bowl, mix lemon juice, coriander, smoked paprika, and salt. Whisk in olive oil.
Pour dressing over carrots, and toss to coat. Let marinate for at least 30 minutes or overnight. Stir in cilantro and pistachios before serving.
