This carrot salad will not only make you gorgeous, but it’s tasty to boot! It is a great addition to a summer barbeque or picnic and can be made well ahead of time. Eat yourself pretty!
Carrot Salad with Cilantro and Pistachio
- 4 cups carrots, peeled and grated
- ¼ cup fresh lemon juice
- 1 teaspoon coriander
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt
- 1/3 cup olive oil
- ½ cup fresh cilantro, chopped
- ¼ cup pistachios, shelled and chopped
