Soy Fettucine Alfredo
A soy version of an old favorite.

Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients
1 lb fettuccine noodles
1 tbsp olive oil
6 minced garlic clove
2 cup low-fat soy milk
6 grated ounce soy Mozzarella cheese
1/4 cup soy Parmesan cheese
1/3 chopped cup parsley
to taste salt
to taste white pepper
Directions:
- Cook the pasta in plenty of boiling water until just al dente, and drain.
- Heat the oil in a large pot over medium heat and saute the garlic for a few minutes, without letting it brown.
- Stir in the soy milk.
- Add the noodles, stirring to coat them with sauce and to prevent sticking.
- Add the soy mozzarella and soy parmesan, stirring until the cheese melts and the sauce thickens.
- Stir in the parsley, salt and pepper.
- Serve immediately.
