Healthy Eating Food – Caprese Tomato Salad
When considering recipes for healthy eating, consider this one! Its layers of peppery greens, luscious tomatoes, and creamy fresh mozzarella, topped with a honey-and-white-balsamic dressing will dazzle your taste buds!
4 Cups Baby Arugula and/or spinach leaves
4 Tomatoes – sliced
8 Ounces Fresh Mozzarella – thinly sliced
2 Tablespoons Slivered Pitted Black Olives
2 Tablespoons Minced Red Onion
¼ Cup Olive Oil
2 Tablespoons White Balsamic Vinegar
1 Tablespoon Honey
1 Small Clove Garlic – crushed
½ Teaspoon Salt
¼ Teaspoon Pepper
2 Tablespoons Thinly Sliced Fresh Basil
Directions
- Arrange greens on serving platter. Top with layers of tomatoes and mozzarella cheese. Sprinkle salad with olives and red onion.
- In a small bowl, whisk oil with vinegar, honey, garlic, salt, and pepper until blended. Drizzle some dressing over salad, then sprinkle with basil. Serve any remaining dressing separately.
