Peach Salsa

8 ripe peaches (about 3 pounds), coarsely chopped
1 small red pepper, cut into 1/4-inch dice
2 green onions, chopped
1/4 cup peach or apricot jam
2 tablespoons balsamic vinegar
2 tablespoons olive oil


  1. In large bowl, toss ingredients until combined. Cover and refrigerate until ready to serve, keeps up to two days.
