Soy French Toast
Serve the French toast with maple syrup, applesauce, fresh or frozen fruit.

Total Time: 20 minutes
Ingredients:
2 cups soy milk
2 tablespoons soy flour
Margarine
8 thick slices of bread
Directions:
- In a large bowl, whisk together the soy milk and soy flour.
- In a nonstick skillet, melt a little margarine over low heat.
- Dip a slice of bread in the soymilk mixture; do this quickly to keep the bread from getting soggy. Then place the bread in the skillet and cook it until browned. Flip the bread and cook until the other side is browned. Remove the bread from the skillet and repeat with the remaining slices.
- Serve the French toast with maple syrup, applesauce, fresh or frozen fruit.
