Who doesn’t love a cold, sweet smoothie on a hot summer day? Take advantage of the season’s bountiful produce and make a delicious, healthy treat that kids and adults will enjoy.
The recipe below is dairy-free and requires no added sugar. If you have picky eaters in your family, this is a great way to incorporate veggies into their diet without having them wrinkle their noses at you. Blending whole fruits and vegetables (rather than just juicing) adds fiber, which is important for digestion and keeps us feeling full longer.
Time-saving trick: put all ingredients (except banana and coconut water) in the blender the night before and store in the refrigerator. This smoothie makes a great power breakfast too!
- 1 large carrot
- 1 large celery stalk
- 1 cup chopped greens (spinach, chard or kale are good choices)
- 1 cup berries (frozen strawberries or blueberries work well)
- 1 large banana (more banana may be added for a thicker consistency)
- 8-12 oz. coconut water
- Blend until VERY smooth.
- Pour into to-go cup, add a straw, and it’s a great on-the-run or poolside treat!
- Makes 4 servings.
